Teff Rhubarb Muffins Share

What you need

  • 2 cups teff flour
  • 1/2 cup tapioca flour
  • 2 tbsp. potato starch or arrowroot powder
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. xanthan gum
  • 1/2 tsp. sea salt
  • 3/4 cup orange juice
  • 1/2 cup applesauce
  • 1/2 cup maple syrup or liquid honey
  • 1/2 cup extra virgin olive oil
  • 2 tsp. vanilla
  • 2 tsp. grated orange peel
  • 2-3 cups chopped rhubarb (or other fresh fruit)

How to make it

  1. Preheat oven to 350 degrees.
  2. Oil muffin tin.
  3. In a large bowl combine the flour, tapioca flour, arrowroot, baking powder, baking soda, xanthan gum and sea salt. Mix well.
  4. In a separate bowl, mix together the juice, applesauce, maple syrup, oil, vanilla and orange zest. Pour the wet ingredients into the dry and mix together well.
  5. Quickly add the rhubarb and gently fold into the batter.
  6. Spoon batter into oiled muffin tin, you will fill each cup tot he top. Sprinkle each with a little sugar or cinnamon-sugar if desired.
  7. Bake at 350 for 20-25 minutes.
  8. Loosen edges with a knife and place on a wire rack to cool.
