Teff Rhubarb Muffins

What you need
- 2 cups teff flour
- 1/2 cup tapioca flour
- 2 tbsp. potato starch or arrowroot powder
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. xanthan gum
- 1/2 tsp. sea salt
- 3/4 cup orange juice
- 1/2 cup applesauce
- 1/2 cup maple syrup or liquid honey
- 1/2 cup extra virgin olive oil
- 2 tsp. vanilla
- 2 tsp. grated orange peel
- 2-3 cups chopped rhubarb (or other fresh fruit)
How to make it
- Preheat oven to 350 degrees.
- Oil muffin tin.
- In a large bowl combine the flour, tapioca flour, arrowroot, baking powder, baking soda, xanthan gum and sea salt. Mix well.
- In a separate bowl, mix together the juice, applesauce, maple syrup, oil, vanilla and orange zest. Pour the wet ingredients into the dry and mix together well.
- Quickly add the rhubarb and gently fold into the batter.
- Spoon batter into oiled muffin tin, you will fill each cup tot he top. Sprinkle each with a little sugar or cinnamon-sugar if desired.
- Bake at 350 for 20-25 minutes.
- Loosen edges with a knife and place on a wire rack to cool.
