Teff Peanut Butter Oatmeal Cookies Share

What you need

  • 1/2 cup butter or margarine
  • 1 cup packed brown sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1/2 cup smooth peanut butter
  • 2 cups rolled oats
  • 1/2 cup teff flour
  • 1/2 tsp. xanthan gum
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 cup chopped peanuts

How to make it

  1. Cream butter and sugar together.
  2. Beat in egg.
  3. Add vanilla and peanut butter.
  4. Mix in remaining ingredients.
  5. Shape into small balls or drop by spoonfuls onto ungreased cookie sheet allowing room for expansion.
  6. Bake at 375 degrees for 12-15 minutes.
