Teff Chocolate Cake

What you need
- 2 1/4 cups teff flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 1/2 cups white sugar
- 1/2 cup hard margarine
- 2 eggs, slightly beaten
- 1 cup milk
- 1 tsp. vanilla
- 2 oz. chocolate, melted and cooled
Icing and Filling
- 2 cups of any chocolate icing
- 3/4 cup raspberry jam
- 2 cups of sliced almonds
How to make it
- Preheat oven to 350 degrees.
- Grease and flour two 8" cake pans.
- Sift together flour, baking powder and soda, cinnamon and salt.
- In a separate bowl, cream sugar and margarine together until fluffy.
- Combine eggs, milk and vanilla and stir into sugar mixture gently.
- Mix wet ingredients into dry ingredients.
- Bake for 25 minutes or until a toothpick inserted into the cake comes out clean.
- Cool for 5 minutes then remove cake from pans and finish cooling on a wire rack.
- Place one cake layer on a plate. Spread with jam then position the second cake on top with the top side up.
- Spread with chocolate icing on sides and top.
- Press almond slices into the sides of the cake.
