Teff Chocolate Cake Share

What you need

  • 2 1/4 cups teff flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/2 cups white sugar
  • 1/2 cup hard margarine
  • 2 eggs, slightly beaten
  • 1 cup milk
  • 1 tsp. vanilla
  • 2 oz. chocolate, melted and cooled

Icing and Filling

  • 2 cups of any chocolate icing
  • 3/4 cup raspberry jam
  • 2 cups of sliced almonds

How to make it

  1. Preheat oven to 350 degrees.
  2. Grease and flour two 8" cake pans.
  3. Sift together flour, baking powder and soda, cinnamon and salt.
  4. In a separate bowl, cream sugar and margarine together until fluffy.
  5. Combine eggs, milk and vanilla and stir into sugar mixture gently.
  6. Mix wet ingredients into dry ingredients.
  7. Bake for 25 minutes or until a toothpick inserted into the cake comes out clean.
  8. Cool for 5 minutes then remove cake from pans and finish cooling on a wire rack.
  9. Place one cake layer on a plate. Spread with jam then position the second cake on top with the top side up.
  10. Spread with chocolate icing on sides and top.
  11. Press almond slices into the sides of the cake.
