Teff Breakfast Muffins Share

What you need

  • 2 cups teff flour
  • 1/2 cup tapioca flour
  • 2 tsp. ground flax seeds
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. xanthan gum
  • 1/2 tsp. sea salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 3/4 cup orange juice
  • 1/2 cup applesauce
  • 1/2 cup liquid honey
  • 1/3 cup extra virgin olive oil
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup raisins
  • 1 cup grated carrots
  • 1 small apple, diced

How to make it

  1. Preheat oven to 350 degrees.
  2. Oil a 12 cup muffin tin.
  3. In a medium mixing bowl, add teff flour, tapioca flour, ground flax, baking powder, baking soda, xanthan gum, sea salt, cinnamon and nutmeg. Mix well.
  4. In another bowl, mix together orange juice, applesauce, honey and oil.
  5. Add the wet ingredients to the dry and mix together. Then add the nuts, raisins, carrots, and apple. Continue to mix until all of the ingredients are combined. 6. Bake at 350 for 25-30 minutes.
