Teff Banana Coconut Loaf Share

What you need

  • 2 eggs
  • 1 cup!white sugar
  • 1/2 cup melted margarine
  • 1 cup mashed bananas (3 medium very ripe)
  • 1/2 tsp. vanilla
  • 1 1/2 cups Teff flour
  • 1 tsp xanthan gum
  • 1/2 cup unsweetened coconut
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 cup chopped pecans

How to make it

  1. Break eggs in mixing bowl and beat until frothy.
  2. Add sugar and melted butter mixing well with eggs.
  3. Stir in mashed banana and vanilla.
  4. In another bowl mix all remaining dry ingredients.
  5. Pour over batter, stirring to combine.
  6. Put batter into a greased loaf pan.
  7. Bake at 350 degrees for 55-60 minutes.
  8. Let stand for 10 minutes then remove the loaf from the pan and finish cooling on a wire rack.
